Summer Salad/Salsa
Ingredients:
1 can black beans, rinsed
1 box cherry tomatoes, quartered
2 cups frozen corn, thawed
small bunch green onions, diced (finely chopped purple onion works well too)
1-2 avocados, chopped
handful cilantro, chopped
juice of 1 lime
2 tablespoons rice vinegar
1 tablespoon olive oil
Optional: 1-2 teaspoons of "salsa seasoning"
Directions:
Combine the first four ingredients in your serving bowl. Chop your avocado(s) in a separate bowl and toss with half of your lime juice to ensure it doesn't brown, then add it to the main bowl.
Dressing: Whisk remaining lime juice, vinegar, oil, cilantro and optional seasonings together, pour onto salad. Stir to evenly distribute. Serve with scoop tortilla chips, or as a salad.
